Simple, elegant roasted asparagus

This is one of the most simple and impressive recipes that you can make. Roasted asparagus is an apt choice for an Easter side dish as it pairs well with ham, quiche, frittata, sweet potato hash .

Start with fresh washed asparagus. I prefer the bigger stalks vs. the smaller stalks due to shrinkage. For smaller stalks, you would cook less minutes.

Preheat the oven to 400-degrees.

Spray oil on the pan, top with aluminum foil. Lay the asparagus in the pan; it’s okay to pile it on.

Spray more oil (I used coconut oil) on the asparagus. I also drizzled with a bit of olive oil. You can add salt and pepper at this point if you like. I added Trader Joe’s South African Smoke seasoning blend because I put it on everything. This blend combines paprika flakes, garlic, sea salt, and basil.

Bake 20 minutes. At this point the asparagus looked done but I baked them another 8 minutes; probably 5 minutes would’ve been a better choice.

Remove from oven, drizzle with balsamic vinegar which further helps to caramelize the asparagus.
