Artichokes

Elegant and simple! This is a delicious soup that I will definitely serve again.

  • 1/2 c. butter
  • 2 bunches green onions, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 (14-oz) cans artichoke hearts, cut into quarters
  • 3 T. flour
  • 8 c. chicken broth
  • dash of cayenne pepper
  • salt
  • 1 T. Worcestershire sauce
  • 1/4 t. thyme
  • 1/3 c. sherry
  • 2 c. half and half

Melt butter.  Saute onions, celery, and garlic.  Add artichoke hearts and mix gently.

Sprinkle with flour and add broth.  Add Worcestershire sauce and thyme; simmer, covered, for 1 hour.

Add sherry and simmer for 10 minutes.  Add half and half and simmer an additional 10 minutes.  Do not allow soup to boil.
